A Culinary Journey with Chef Julien Royer

This October, a unique opportunity awaits food enthusiasts in India. The Oberoi Hotels & Resorts is hosting a special four-night experience featuring the renowned Michelin-starred chef, Julien Royer. Known for his work at Odette in Singapore, a three-Michelin-starred restaurant, Royer is bringing his distinctive approach to French cuisine to the Indian cities of Bengaluru and Mumbai.

The Experience

The event will take place from October 18-19 in Bengaluru and October 23-24 in Mumbai. This exclusive dining experience offers a rare chance to savor a menu crafted by one of Asia’s most celebrated chefs. The collaboration between Oberoi Hotels & Resorts and Chef Julien Royer promises an evening that transcends the ordinary, delivering a meal that resonates deeply with the soul.

A Taste of Memory and Emotion

Odette, the restaurant named after Royer’s grandmother, is a tribute to memory, emotion, and the belief that food should be personal. His upbringing in rural France, surrounded by generations of farmers, has instilled in him a deep respect for ingredients, seasonality, and storytelling.

“I’m truly excited to be cooking at Oberoi Hotels in Bengaluru and Mumbai,” shares Chef Royer. “The incredible ingredients and spices of this region have long inspired me. This is an opportunity to share the Odette perspective on modern French cuisine—elegant, precise, and deeply rooted in emotion.”

A Menu That Speaks In Emotions

At the heart of this extraordinary evening lies a tasting menu with five courses that unfold like chapters of a beautifully-written novel. Each course is designed to evoke emotions and tell a story:

  • First Course: A delicate mangrove crab, touched with horseradish and crowned with Kristal caviar.
  • Second Course: A langoustine folded tenderly into a dumpling, its form a graceful nod to Asia, its soul unmistakably French.
  • Third Course: Arctic toothfish nestled in a warm prawn consomme that smells like the sea at sunrise.
  • Fourth Course: A millefeuille of Cevenne onion, its golden layers softened with beurre noisette and lifted with vin jaune. A humble ingredient, transformed.
  • Dessert: A creation called Grain de Cafe, combining mascarpone, pecan praline, and the earthy roast of sobacha in a way that feels both familiar and entirely new.

Two Cities, Two Distinct Settings

In Bengaluru, the dinner will be held at Wabi Sabi, an oasis within The Oberoi. This space blends the wabi-sabi philosophy of Japan with modern Indian sensibility. Guests will dine beside koi ponds, surrounded by raw textures, kintsugi-inspired ceramics, and the soft rustle of bamboo. It’s reflective luxury, tailored for the city’s growing tribe of conscious diners.

In Mumbai, the experience shifts to Vetro, the hotel’s refined Italian restaurant. Here, under the glow of Murano glass and beside the Enoteca wine library, the dinner takes on a more urbane, cosmopolitan character, fitting for a city where tradition and modernity live side by side.
